You can follow below -

1. You will need to create data template for the object(s) for which you want to backup the data.

2. Once you create the template, you can create a deployment which will create the dataset.

3. This particular deployment you can run through a scheduled job.

Few things to remember -

1. You can create a single template for one object OR a chain of templates i.e for CPQ price rules, you can start with price rules as the main or master object and then can create it's childs as Price Actions, Price Conditions, Lookup Queries

2. Data sets are a CSV files. So you your data is always backed up in the files.

3. You can maintain the versioning of data or you can always override and create a new copy (discard previous) of your backup file(s)
